It’s no secret that I love food. It’s one of my biggest weaknesses. Being a single girl is hard enough though and eating out can be expensive! For a few years now I have been cooking for myself, for family members, and friends. I have followed the footsteps of my dad and learned several persian dishes, as well as the arsenal of how to read and follow a recipe.

My biggest issue when deciding whether to eat out or to cook is time and planning. COOKING IS ALWAYS HEALTHIER AND CHEAPER! For the amount of 4 meals out… you can eat for a week or more. Sometimes, another challenge I face is finding food that is healthy and appealing to my taste buds.

Below are 3 different vegan/organic recipes that can be made in 5 minutes or less! In addition, they are healthy AND taste good!

VEGAN BANANA PANCAKES

what you’ll need-
1 c unbleached flour
2 tsp baking powder
1 mushy banana, mashed
1 1/4 c soymilk
1 tbsp unrefined sugar

Mix flour, sugar, and baking powder in large bowl.

In small bowl, mash banana with soymilk until lumps are reduced.

Add banana mixture to dry ingredients, blend until smooth.

Heat oil or PAM in non-stick pan over med-high heat.

Portion out batter into pan. When edges turn golden and pancakes start to bubble, flip and cook until done.

GLUTEN FREE AVOCADO TOAST

what you’ll need-
avocado
lemon
1/2 chopped green jalapeno
sea salt
pepper
red pepper flakes
olive oil
pumpkin and flaxseed cracker toast

Use a knife to cut the avocado in half.

Use a spoon to carve the avocado from its skin.

Add half a squeezed lemon and avocado in a bowl.

Mush the avocado with the lemon juice til it’s a good consistency.

Add the chopped jalapeno.

Season with salt, pepper, and red pepper flakes to your liking.

Use a spoon to spread the avocado mix on the toast.

Lightly sprinkle olive oil on top and VOILA!

ORGANIC/GLUTEN FREE EGG AND BASIL TACOS

what you’ll need-
2 organic eggs
fresh basil
gluten-free blue corn tortillas
jalapeno (for taste)
sea salt and pepper

Scramble the egg and basil with salt and pepper combo together.

Cook scrambled eggs to your liking.

In another pan, heat up a table-spoon of olive oil and heat/lightly fry your tortillas.

Place egg in the tortillas and spruce up your taco with jalapeno, salsa, and avocado for taste!
